I have been dying to try making a pudding with Chia Seeds.  I heard a rumor that they basically turn anything into pudding and couldn't wait to try it!

The Honeybadger's fairy godmother sent her gummy worms, and that got me thinking about one of my childhood favorites...dirt.  No, not the one on the ground, but the one with Chocolate Pudding and Oreos!  Can you see where I'm going with this?!

My mother made it for a party or two when I was a kid and it is SO simple.  You layer chocolate pudding, and crumbled cookies.  At the top you can decorate with some gummy worms or other fun dirt-like candies and serve it with a shovel!

Not only do Chia Seeds magically turn things into pudding, but they have a lot of health benefits.  It was fun to adapt a recipe that I loved as a child into something healthier for my family!

I found a recipe for Chocolate Chia Seed Pudding on the Minimalist Baker, and I set out for ingredients!  I decided to substitute organic cows milk for Almond Milk, but it was basically the same.  Chia seeds were in bulk at Whole Foods, so that was easy.  

The next part?  Finding healthier Oreo like cookies?  Not so easy.  After a few failed taste tests I can honestly say that the 365 brand chocolate sandwich cookies at Whole Foods are pretty darn close!!  The creme is slightly different as it's made out of cane sugar, but still tasty!



I doubled the original pudding recipe.  I put the cocoa powder, milk, and chia seeds into the blender.  After blending thoroughly, I sweetened it with Grade B Maple Syrup. I had to use about 2 cups of the syrup, basically a ton!  The chia seeds have a very distinct taste and the cocoa powder is pretty bitter. It needed...

Next I put it in the fridge for four hours.  It needs to be in there overnight.  Chia seeds have texture, even when they are blended. I actually don't mind it, or the flavor.  This just ain't Grandmas pudding if you know what I mean.

The cookies were also blended into crumbs which I layered into the dirt pudding cake!  It was a complete hit! The kids loved it, I will absolutely make it again.  Next time I will leave it overnight to combine the Chia Seeds more thoroughly though.  Just like Yo Gabba Gabba...try it.  You'll like it!!!



Ingredients adapted from the Minimalist Baker

Chia Seed Chocolate Pudding

3 cups of milk
2/3 cup Chia Seeds
1/2 cup unsweetened cocoa powder
2 cups Maple Syrup

Add all of the ingredients in the blender except the Syrup.  Blend well. 
Add Maple Syrup to Taste (next time I will try dates)

Refrigerate Overnight and Enjoy!

Dirt Cake

 Pulverize one entire package of cookies in the blender

 Start with a layer of the chia seed pudding on the bottom

Next layer the crumbled cookies on top to cover

Top with gummy worms and enjoy!
