Instant Pot Greek Ground Turkey & Rice Dinner

Many years ago, I was introduced to chicken rice.  It is not actually chicken, but a delicious one-pot dinner with rice and hamburger meat. I have been looking for something similar every since.  When I found this ground turkey recipe on Pinterest, I decided that I would try to adapt it for the Instant Pot.  Not only did it work, but the kids loved it.  I love that it is truly ONE POT, and so quick.  By reading beyond this point, you are agreeing to my updated privacy policy (here), and my use of commissioned links.

I love the idea of an easy Instant Pot dinner, so I adapted it for the pressure cooker!


Every one of my dinners lately has been an easy dinner.  I am not interested in cooking and cleaning yet another meal.  Usually it is challenging to deviate from what we usually eat because the kids end up hating it.  What a pleasant surprise that they absolutely LOVED it, and begged me to make it again.  I cannot wait to hear if this works for your family.  



I adapted the above recipe to make it compatible with the Instant Pot, and to make it organic/healthier.  I used a different type of rice ( I go into the reasons why below), and did you know that brown rice has a lot of heavy metal/arsenic in it?  Neither did I, but I found a brand that tests its rice products.  It is meant to serve 4, but my family of five has enough for leftovers!



Brown Rice


Prep Time: 5 minutes
Cook Time: about 40
Serve:s 4 adults

Ingredients:


  1. 1.5 pounds of ground turkey
  2. 2 cups of rice ( I recommend brown)
  3. 2 tsp oregano
  4. salt
  5. pepper
  6. 3 cloves minced garlic
  7. 2 TBSP olive oil
  8. 1 cup kalamata olives, sliced
  9.  1/2 Pound of frozen chopped spinach
  10. 4 cups of broth (I used better than bouillon beef)
  11. 2 oz crumbled feta cheese
Note: do not use white rice with this recipe, it doesn't hold up well in the pressure cooker.  I did it once, and it was a mushy mess.  I think any other heartier rice variety would work well.

Instructions:


  1. Add the olive oil and garlic to your instant pot on sauté  until the garlic is fragrant. Add the ground turkey, oregano, salt, and pepper to your instant pot. Sauté until the turkey is cooked.
  2. Turn off the saute' function. Allow the Instant Pot to rest for a moment before turning it back on.
  3. After the turkey is cooked, add the rice, frozen chopped spinach, and olives.
  4. Add the broth.
  5. Stir to mix the ingredients.
  6. Put the lid on your pot, and for brown rice (or something like wild rice with a heartier grain) push the mixed button.
  7. Once the time has finished, manually release the pressure.
  8. Add your crumbled feta cheese to the top, serve, and enjoy!
