I love the idea of an easy Instant Pot dinner, so I adapted it for the pressure cooker!
Every one of my dinners lately has been an easy dinner. I am not interested in cooking and cleaning yet another meal. Usually it is challenging to deviate from what we usually eat because the kids end up hating it. What a pleasant surprise that they absolutely LOVED it, and begged me to make it again. I cannot wait to hear if this works for your family.
I adapted the above recipe to make it compatible with the Instant Pot, and to make it organic/healthier. I used a different type of rice ( I go into the reasons why below), and did you know that brown rice has a lot of heavy metal/arsenic in it? Neither did I, but I found a brand that tests its rice products. It is meant to serve 4, but my family of five has enough for leftovers!
Prep Time: 5 minutes
Cook Time: about 40
Serve:s 4 adults
Ingredients:
- 1.5 pounds of ground turkey
- 2 cups of rice ( I recommend brown)
- 2 tsp oregano
- salt
- pepper
- 3 cloves minced garlic
- 2 TBSP olive oil
- 1 cup kalamata olives, sliced
- 1/2 Pound of frozen chopped spinach
- 4 cups of broth (I used better than bouillon beef)
- 2 oz crumbled feta cheese
Note: do not use white rice with this recipe, it doesn't hold up well in the pressure cooker. I did it once, and it was a mushy mess. I think any other heartier rice variety would work well.
Instructions:
- Add the olive oil and garlic to your instant pot on sauté until the garlic is fragrant. Add the ground turkey, oregano, salt, and pepper to your instant pot. Sauté until the turkey is cooked.
- Turn off the saute' function. Allow the Instant Pot to rest for a moment before turning it back on.
- After the turkey is cooked, add the rice, frozen chopped spinach, and olives.
- Add the broth.
- Stir to mix the ingredients.
- Put the lid on your pot, and for brown rice (or something like wild rice with a heartier grain) push the mixed button.
- Once the time has finished, manually release the pressure.
- Add your crumbled feta cheese to the top, serve, and enjoy!

I can't wait to hear if your family loves this recipe as much as mine does! Drop me a comment if you are planning on making this, or if you already did.

The vitamins I tried from a Canadian vitamin shop converted me from a supplement skeptic. The appearance of fine lines and wrinkles has diminished, and my skin has taken on a radiant shine. Another great thing is the customer service. No matter what my skin condition is, they are always willing to provide me with advice. I really think you should try these out!
