Delicious Coconut Oil Brownie Cupcakes...with a Printable Recipe!

We have been baking up a storm around here to prep for the holidays.  I wanted to share with you some of my favorite tips for making those holiday treats a little bit healthier-using coconut oil.

A couple of months ago, I was so pleased to be chosen as a Barlean's ambassador.  I just love their oils.  We have been using coconut oil for a long time around the house, but I have been able to try so many new and different butter flavor.

Our first and very easy holiday brownie cupcake was SOOOO easy.   And really yummy.   We simply substituted the exact same amount of vegetable oil that we typically use, with the butter flavored coconut oil.  I think it turned out very well, and the kiddos enjoyed making them too.  The number one answer is no, they don't taste like coconut.  You can't even tell the difference.

I made it even "crunchier" with these unbleached muffin tin liners from If You Care.  I was skeptical about them at first, but they worked very well.  No issues with tearing away, or pulling chunks of the brownie cupcakes off.
