We adapted this recipe from the King Arthur Flour Whole Grain Baking cookbook.

Adapted from the King Arthur Flour cookbook
Dry Mix:
3.5 cups (12 1/4 ounces) old fashioned rolled oats
4 cups (1 pound) whole wheat flour
1 cup (4 ¼ ounces) Barleans Superfruit Blend
3 tablespoons (1 ¼ ounces) sugar
3 tablespoons (1 ½ ounces) baking powder
1 tablespoon salt
1 tablespoon baking soda
¾ cup (5 ¼ ounces) Barleans Culinary Coconut Oil
Making your mix:
Grind the oats in a food processor, or vitamix until they are fine, but not powdered. Add the oats flour and dry ingredients together. We use our kitchenaid mixer. Melt the coconut oil. Drizzle the oil into the dry mix while it is mixing. It should hold together. If not, add one tablespoon of oil at a time until the consistency is correct.
We put this mix into the freezer, in an airtight container until we want to make pancakes.
Pancakes:
For a single batch which is enough for one breakfast. Make a triple batch and freeze the leftovers for easy toasting!
1 cup of mix
½ cup plain yogurt
½ cup milk
1 large egg
On a hot griddle place ¼ cup of the batter at a time. After 3 to 4 minutes and he surface is beginning to dull, flip the pancake. 1 to 2 more minutes, and you should have yummy pancakes!
These are so good, we serve them plain, although they are delicious with butter, maple syrup, and/or peanut butter.
During the week, they are small enough to pop in the toaster for a quick home-cooked breakfast before school.
