California Egg Salad with Bacon

We all struggle with what to do with all of the eggs left from Easter, and I love this California style egg salad with bacon.  Why bacon?  We may not be able to be friends.  Everything is better with bacon!

California Organic Egg Salad


 ¾ Cup Mayo

 12  Eggs

 ½ Cup Red Grapes

 ½ Cup Almonds

 ¼ Teaspoon Yellow Mustard

 4 Pieces Bacon


1. Boil Eggs.

2. Rinse with cool water.

3. Allow to cool.

4. Peel eggs.

5. Cook bacon until crisp.

6. Crumble bacon.

7. Mash hard boiled eggs in a large bowl

8. Combine mayo, eggs, grapes, almonds, and mustard together.

9. Top with crumbled bacon.
