Healthy Breakfast Recipes for Busy Mornings

When you are a mom, mornings are busy. Trying to get everyone dressed, packed for school, fed, and out the door in time is challenging. I have some ideas, other than cereal, that are easy, and healthy.


When you’re responsible for so much during mornings before school, it can be tough to figure out
what to feed your kids for breakfast. Often times, we end up sending our children out the door with
a cereal bar. But if your child isn’t getting the nutrients they need in the morning, or if he or she is
among the 20% of children who skip breakfast every day, it’s important to find the time to provide
them with a filling breakfast.


Fortunately, nutritious meals don’t have to be time-consuming, and there are plenty of ways to prepare
a healthy, delicious breakfast even on a busy morning. These recipes will help you manage the chaos
that comes before school while ensuring your children get a filling breakfast each morning. This post

Instant Pot Hard-boiled Eggs



Hard-boiled eggs are typically cooked on the stove, but many people don’t know they can also be
cooked in the Instant Pot, and if you don't have an Instant Pot, in the oven. This is an easy way to
prepare a large number of eggs in advance, allowing you to make enough at one time for an entire week
of breakfast.


For the oven: preheat your oven to 350 degrees and place one egg inside each cup of a muffin pan.
The eggs should be just right after 30 minutes of baking, and should then be cooled in a large bowl of
ice water for roughly ten minutes. After that, just put them in the fridge and take them out in the
morning! The Instant Pot is much easier, and the method we use weekly!


Frozen Yogurt Bites



GoGurt and other brands have demonstrated the appeal frozen yogurt can have to children, and
this recipe provides an even better taste with more filling ingredients and far less sugar. Combine the
yogurt of your choice with granola at a 4:1 ratio, then pour the mixture into muffin cups and top each
one with a sliced berry. We actually make our yogurt in our Instant Pot too, and store it in mason jars
for ease.


These are easy to prepare in advance for the entire family, making them a great option for hectic
mornings when there isn’t time to cook a full breakfast. Homemade frozen yogurt bites will be much
more filling for your children than the store-bought alternatives, and the lower levels of sugar make
them a much healthier option, too.

Casserole Muffins



Casserole muffins, made from bread, ham, cheese, and an egg mixture, are a great way to make a
hearty breakfast from common ingredients or leftovers. They can also be frozen and eaten throughout
the week without losing their flavor.


Start by putting pieces of bread, ham, and cheese into a muffin pan, then pour the egg mixture (which
includes milk, pepper, and ground mustard) over each cup. Bake for 15-18 minutes, and microwave in
30 second increments when taking the muffins out after freezing. Another option is forgoing the
muffins, and baking it into a casserole. Then, we cut it into squares!
