No Regrets Dessert-Whole Food Instant Pot Berry Crumble

I have had this crazy idea to make a super easy, delicious (duh) and super healthy dessert in my Instant Pot.  It sounds sort of impossible, but I HAVE DONE IT!  I tried to use ingredients that you probably have in your house! Sound too good to be true?  It isn't.

It was GOOD

I would say that this is a very basic recipe, that even an Instant Pot newbie should be able to do well.  It is that easy.  Let's face it, if it's not easy, I don't really do it.  My poor kids.  HA!  

Let's also talk about date sugar for a minute.  I decided to use it as an experiment, because they are so sweet, and lots of people use them for baking.  Aside from the health benefits, date sugar is essentially dehydrated dates- so not sugar at all!  For those of us trying to avoid refined sugar, it was a great alternative!


Here is what it looks like

Ingredients:


6 cups of fruit  (I used frozen organic mixed berries, but any kind will do)

1 1/2 cup date sugar (or brown sugar or whatever sugar you have)

1 cup flour (I used whole grain organic)

1 cup oats (any but instant)

10 TBS (5 oz) Coconut Oil (I used Barleans Butter Flavor)

Dash of cinnamon

You will need an oven safe dish, like a pyrex,without the lid, that will fit inside your instant pot.  This is called the pot in pot method.



Recipe:


1.  Mix the 6 cups of berries with 1/2 cup of date sugar (or the sugar you have on hand)

2.  Put the mixture in the oven safe pyrex (or your pot in pot dish)

3.  In your food processor, pulse the oats, the remaining sugar, the flour, the coconut oil and the cinnamon, until they are well mixed.

4.  Sprinkle the crumble on top of your berry mixture.

5. Place one cup of water in the bottom of your Instant Pot, with the trivet on top.

6.  Then place your Instant Pot safe dish (in my case pyrex), on top of the trivet.

7. Cook on Manual for 15 minutes if you are using frozen berries.  With fresh, I would use 9 minutes.


8.  Release the pressure manually and enjoy!
